Ayurvedic apple & date bread
Best for Vata/ Pitta types
Gluten Free
Ingredients
1 cup Almond Flour
1/4 cup Arrowroot powder
1/4tsp baking soda
1tsp baking powder
1 1/2 tsp sweet masala spice blend (*see recipe below)
1/2 cup coconut sugar
1/2 cup applesauce (*see recipe below)
1/4tsp vanilla extract
1/2 cup coconut oil
1/2 cup dates chopped (plus 3 for decoration topping )
1 egg
Preheat oven to 375 degrees. Grease a 9-inch rectangle pan.
In a large bowl, mix together all dry ingredients
In a food processor, combine the coconut oil, dates, vanilla extract and applesauce. Puree till smooth.
Add the egg to the liquid mixture, then add the liquid mixture to the dry mixture. Stir till batter is smooth.
Spread the batter into the baking pan. Top with 3 pitted dates sliced in half. Bake for 30-35 mins. Check with a toothpick to make sure it comes out clean.
Let the bread cool down before serving.
*Applesauce Recipe
Ingredients
1 apple
Peel and cut apple into small pieces. Put apples into small space pan and cover with filtered water. Add 1 tsp cinnamon. Bring to boil, then reduce temperature to low. Simmer till apples are soft. Let cool. Blend in a small food processor till smooth.
*Sweet Masala Spice Blend Recipe
Ingredients
1 tablespoon fennel seeds
1 tablespoon coriander seeds
1tsp cardamom seeds
1 1/2 tsp cinnamon bark
1 tablespoon dried rose petals
Place all ingredients is a spice blender or electric grinder, grind to a fine powder. Store in airtight container.
