zucchini bread

Ingredients

• 2 cups shredded zucchini (strain excess liquid)

• 1 cup applesauce

• 1 cups whole wheat flour

• 1/2 cups walnut or almond flour

• 3/4 cup organic raw cane sugar

• 1 tsp vanilla extract

• 1/4 cup melted coconut oil

• 1 tsp baking soda

• 1/2 tsp baking powder

• 1/2 tsp salt

• 1 tsp ground cinnamon

• 1/4 cup chopped dates

• 1/4 cup chopped walnuts

Instructions

• Preheat the oven to 350°F (175°C).

• In a medium bowl, whisk together the dry ingredients (flour, sugar, baking soda, baking powder, salt, and ground spices).

• In another medium bowl, mix together the wet ingredients (zucchini, applesauce, vanilla, and coconut oil).

• Add the wet ingredients to the dry ingredients and gently stir until just combined (do not overmix).

• Fold in the chopped dates and walnuts.

• Pour the mixture into a parchment-lined or greased loaf pan.

• Bake at 350°F for 50–60 minutes, or until a toothpick inserted in the center comes out clean. Allow to cool before slicing and serving.
