Sautéed kale with paneer cheese

INGREDIENTS

Cook Time: 10 mins with already made fresh paneer cheese. Makes 2 servings

4 cups organic kale stems, washed and chopped

1/4 cup filtered water

1 tbsp ghee

1 tsp sliced ginger

3/4 tsp ground cumin

3/4 tsp ground coriander

3/4 tsp ground fennel

1/4 tsp ground turmeric

1 cup cubed paneer

pinch of salt and pepper

Lime wedges for garnish

Directions

  1. Using a medium-large sauce pan heat ghee on medium setting. Add ginger, cumin, coriander, fennel and turmeric. Toast for 10 seconds mixing it with the ghee.

  2. Add kale to the pan and sauté for approximately 5-10 mins till the greens soften. Add the paneer cheese gently. Softly stir. Add 1/4 cup water. Bring heat to low, simmering for 5 mins.

  3. Turn heat off. Add salt & pepper to taste. Serve warm over a bed of basmati rice, garnish with a lime wedge and a cup of my Yogi Tea.
