mulberry jam
Makes: 1 4oz Jar Prep: 10 minutes Cook: 20 minutes
Ingredients
4 ounce jar
3 cups fresh mulberries
1/4 cup organic rock sugar
1 lemon juice
1/2 tablespoon pink peppercorn, crushed
Step one: Macerate the fruit. Stir together, fruit, sugar, and lemon juice in a non-reactive bowl. Cover and let’s stand at room temperature for four hours or chill overnight.
Step two: Cook the fruit mixture, boil the fruit mixture, smashing the berries, stirring often until thicken.
Step three: Test the jam. Freeze a spoonful of jam for three minutes. Press your finger against the edge of the jam, the surface should wrinkle. If not, continue cooking.
Step four: Spoon mixture into jar. Seal and store in the refrigerator for 3-5 days.
