Carrot ginger dressing
1 cups carrots chopped
1/2 cup onion chopped
2 tbsp fresh ginger, peeled and finely chopped
1 tbsp raw cane sugar
1/4 cup low sodium soy sauce
1/2 cup rice vinegar
1/2 tsp salt
1/4 cup safflower oil or sesame oil
Instructions:
Add all the ingredients in a blender or food processor. Make sure to not over blend the mixture. Leave it a little chunky so that it still has texture to it. Pour the dressing into a bottle or container and store in the refrigerator for up to 5-7 days.
