Adaptogen cake with rose,cardamom and pistachio

I made this cake for one of my dear friend’s birthdays. The filling has Ayurvedic adaptogen plants Ashwagandha and Shatavari, rose petals, fresh pears with ghee to keep it moist and a flavorful rose and cardamom buttercream frosting dusted with pistachio powder. I served this with my yogi tea recipe and it was a hit with the birthday girl and my guests! I used a dome cake pan and added fresh flowers from around my house for a unique spin adding an earthy element of surprise! Tip: reheat the cake toasting the slice with a little bit of ghee.

INGREDIENTS

2 cups Einkorn flour

1 organic pear, peeled and grated

2/3 cup organic whole milk

1/2 cup raw sugar

1/4 cup arrow root powder

1/4 cup melted ghee

1/2 cup pistachios, ground to a powder

2 tbsp dried rose petals

1 tbsp Ashwagandha powder

1 tbsp Shatavari powder

1 tsp vanilla extract

1 tsp ground cinnamon

1 tsp ground cardamom

1 tsp baking powder

1/2 tsp baking soda

Decor: 1 tbsp rose powder, fresh flowers

Directions

  1. Heat oven to 350 degree F. Grease a 9-inch cake pan and dust with flour.

  2. Using a medium-large bowl mix all dry ingredients.

  3. In a small sauce pan melt the ghee on low. Add the grated pear, milk, sugar and vanilla extract. Allow to come to room temp. Once cooled add the egg.

  4. Add the liquid mixture to the dry mixture.

  5. Pour mixture into cake pan. Bake for 45 mins or until toothpick or skewer inserted in the middle of the cake come out clean.

  6. Let the cake cool before removing adding frosting.

  7. Decorate with frosting, dust the rose powder and pistachio powder. Add fresh flowers. Serve with yogi tea. Enjoy!

Rose, Cardamom Buttercream Frosting

INGREDIENTS

1/2 cup unsalted butter (room temp)

2 cups confectionary sugar (sifted)

2 tbsp organic whole milk

1 tbsp rose water

1 vanilla bean

4 cardamom pods (remove shell and ground the seeds)

  1. Using an electric mixer, add butter and mix till creamed 2-3 min on med-high setting.

  2. Add the sugar. Mix 2-3 min on med-high setting.

  3. Add the milk, rose water, vanilla and crushed cardamom seeds. Mix 2-3 min on med-high setting.
