Cooling Cucumber soup

Summer means Pitta Season is here. The days are longer and the sun is hotter. Pitta Dosha is the archetype of the Fire element in nature. During the summer months the fire energy also the Yang(masculine) energy is most dominant. We become busy bees going here going there, doing this doing that. Pitta Dosha makes shit happen and gets the job done. If we are not careful burnout can happen real fast. Does this sound at all familiar? Here is my Ayurvedic take on this cold soup recipe to nourish but also pacify the internal heat.

INGREDIENTS

Makes 2 servings/1 cup per serving

2 Medium sized cucumbers seeded and diced into 1/2-1inch pieces

1 inch fresh ginger diced into small pieces

1/2 zucchini peeled and diced

1 bunch cilantro (save some for garnish)

1 tsp Mom’s super spice masala (www.chandika.com)

1 tsp Soma salt (www.chandika.com)

1/4 tsp black pepper

1/2 cup spring water

1tsp tahini

1 tsp organic honey

1 tsp olive oil

1 tsp lemon juice

1 tsp apple cider vinegar

2 tablespoons pepitia seeds for garnish

Directions

  1. Add all ingredients to a blender. Mix till well blended.

  2. Transfer to a glass bowl and chill in the refrigerator for 1 hour.

  3. Serve chilled. Top with garnish and a drizzle of olive oil.

  4. Enjoy!
