Ayurvedic stewed apple breakfast oats
This recipe uses spiced stewed apples which are recommended for breakfast as a pre-biotic to support gut heath. My version of overnight oats that don't require waiting overnight to enjoy.
INGREDIENTS
Prep: 30 mins
Makes 4 servings, 1/2-1 cup per serving
1 cup whole grain rolled oats
1 cup medium sized apple (peeled and diced into ½ inch pieces
½ cup walnuts (chopped into pieces)
½ cup dried fruit (raisins, apricot, figs etc. chopped into pieces except for the raisins)
½ tsp ground cinnamon
¼ tsp ground cardamom
¼ tsp ground clove
pinch of salt
fresh homemade yogurt, farmers market yogurt, greek style yogurt (I use yogurt that I purchase from my local farmers market in passionfruit, pistachio, fig flavors) But any flavor you love will work! If you use plain yogurt then I would add a little good quality honey for sweetness.
garnish with fresh mint, a pinch of cinnamon and cardamom
Directions
In a small saucepan add your diced apples and ground clove, with 2 cups filtered water. Bring to boil on the stove, reduce heat to simmer till apples are soft approx 10 mins.
In a medium glass bowl, add the oats, dried fruit, walnuts, cinnamon and cardamom. Add the stewed apples with the warm apple juice into the glass bowl. Mix all the ingredients together.
Cover the bowl and let it sit for 30mins - 1 hour.
Serve with a dollop of yogurt, cinnamon, cardamom and mint.
Store for up to 2-3 days in the fridge.
