hair wellness Flower cookies
Just in time for Spring or any festive occasion. In my Ayurvedic -inspired version of a shortbread cookie I’ve replaced the butter for ghee, white flour for a more nutritious version Einkorn and added Bhringaraj the “King of Hair” botanicals for hair benefits. Who says you can’t have a little sweet with your haircare. Why not eat your hair wellness too! Enjoy with your favorite cup of tea or herbal latte.
INGREDIENTS:
1 ½ cups (3 sticks, 339g) ghee
1 1/3 (300g) cups natural raw sugar
2 teaspoons (10g) kosher salt
3 egg yolks (60g)
2 tablespoons (25g) or vanilla extract
2 tablespoons oat milk
1 1/2 teaspoon ground cardamom
3 tablespoons Bhringaraj Powder
4 1/4 cups (690g) Einkorn flour
pressed flowers for decorating and/or fresh rosemary or lavender is lovely as well (you can use dried flowers- rose, calendula, helichrysum, chamomile, rose, butterfly bluepea)
INSTRUCTIONS:
In the bowl of a mixer fitted with a paddle attachment, beat together the ghee, sugar, and salt on medium speed until completely combined for approximately 1 to 2 minutes. Add the yolks, milk and vanilla extract. Mix until just combined. Add the flour, cardamom, bhringaraj powder and mix on low speed until the dough comes together in a ball.
Remove the dough and place on a large sheet of parchment paper or nonstick silicon baking mat. Place a piece of parchment on top and roll the dough until it’s 1/3” thick. Remove the top piece of parchment paper and stamp out your cookies with a 3” round cookie cutter and then decorate cookies with pressed flowers or sprinkle with dried flowers. Continue this process until all remaining dough is used.
Remove your flower pressed cookies with a spatula and place on a parchment-lined cookie sheet leaving ¼” space between each.
Preheat the oven to 350°F. Place the baking sheet in the center rack of the oven and bake for 9 minutes; rotate the pan and bake for another 6 minutes, or until edges are golden brown. Keep an eye out for the flowers to make sure they don’t burn. Transfer to a cooling rack and sprinkle with organic raw sugar. Enjoy beauties!
