Tender and delicately scented. The high fat content from the yogurt gives this cake a moist and slightly dense crumb. Serve with a dollop of yogurt, fresh seasonal berries and fresh mint.

INGREDIENTS

Total time: 2 HR, Makes 10 servings

Baking spray with flour

9 tbsp fresh plain yogurt, plus more for serving

3 eggs

1 1/3 cups raw cane sugar

2/3 cup olive oil

2 tsp. orange zest (reserve 1 tsp. for garnish)

1 tsp vanilla extract

2 tsp fresh ground cardamom

2 cups Organic All-purpose Einkorn flour

2 tsp. baking powder

1/2 tsp. kosher salt

fresh seasonal berries for serving

fresh mint leaves for garnish

Directions

  1. Preheat oven to 350 degrees F. Lightly coat a 9-inch round cake pan with baking spray

  2. Wish together yogurt, eggs, sugar, oil, orange zest and vanilla extract in a large bowl until smooth. Add, flour, baking powder, and salt; whisk until dry ingredients are incorporated. Pour batter into cake pan.

  3. Bake for 35-40 mins. Let cake cool for 10 mins. Transfer cake to cooling rack. Serve with yogurt and fresh seasonal berries.

Note: You can experiment with flavored yogurt like rose, pistachio, etc. Have fun with it!
