Green Goddess Soup

Moringa is known as a superfood packed with nutrients, iron, vitamin c, calcium, protein, potassium, and antioxidants. It cleanses the Liver, Gallbladder, muscle, fat and bone marrow. Strengthening the immune system , support weight loss and digestion.

Makes 4 servings

Ingredients

4 cups filtered water

4 Tablespoons Moringa tea leaves

1tsp moringa powder

1 cup taro root, peeled and diced

2 tsp superspice masala (see recipe below)

1 1/4tsp salt

1 tsp olive oil

Lime wedges for garnish

Instructions

  1. Boil water 4 cups water then pour into heat safe jar with Moringa tea leaves. Steep for 30mins.

  2. Strain Moringa liquid into a medium saucepan.

  3. Add all remaining ingredients. Bring to boil, reduce heat and simmer for 20 mins.

  4. Transfer to a blender after cooling for 10 mins. Blend till smooth.

  5. Serve hot with lime wedge and cracked black pepper

Superspice Masala (spice blend recipe)

2 tablespoons coriander seeds

2 tablespoons fennel seeds

1 tsp ground tumeric

1tsp cumin seeds

Dry toast spices on low heat 5 mins till they release their aromas. Transfer a grinder, grind to a fine powder and store in an air tight container.
