Banana Date Muffins

I’m obsessed with baking healthy breads for breakfast and to snack on. Filled with fresh fruit these are light yet nourishing, dairy-free and gluten-free.

Prep: 20 mins Bake: 20-25 mins Serves 6-8

INGREDIENTS

2 cups Almond flour

2-3 ripe organic bananas (make sure they are ripe! add the 3rd banana if you want more of the flavor)

1/2 cup warm water

2 medjool dates

1 tbsp organic raw sugar

1 tsp vanilla extract

1tsp baking powder

1 tsp cinnamon

1/2 tsp baking soda

1/4 tsp salt

Directions

  1. Heat oven to 350 degree F.

  2. Using a medium-large bowl mix all dry ingredients.

  3. In a blender add bananas, dates, vanilla extract and water.

  4. Add the liquid mixture to the dry mixture.

  5. Pour mixture into non-stick muffin pan. Bake for 20 mins or until toothpick or skewer inserted in the middle of the muffin comes out clean.

  6. Let the muffins cool. Serve with tea or coffee. Enjoy!
